Vegan Baked Beans

Ingredients

  • 2 cans(15 oz each) navy beans or cannellini beans drained and rinsed
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • ½ cup ketchup
  • ¼ cup maple syrup
  • 1 tbsp coconut aminos
  • 1 tbsp tamari
  • 1 tsp smoked paprika
  • 1 tbsp apple cider vinegar
  • 1 tbsp yellow mustard
  • ½ cup water
  • Freshly ground black pepper to taste
  • Hot sauce to taste

Instructions

Preheat Oven:

  • Preheat your oven to 350°F (175°C).

Sauté Aromatics:

  • In a pot over medium heat, add a splash of oil (or a bit of water for oil-free). Sauté the chopped onion for 4–5 minutes or until translucent.
  • Add the minced garlic and smoked paprika, cook 1–2 more minutes until fragrant.

Combine Ingredients:

  • To the pot with the onions and garlic mixture, add ketchup, maple syrup, coconut aminos, tamari, apple cider vinegar, yellow mustard, water, salt, pepper, and hot sauce (optional).
  • Stir constantly for about a minute, then add in the drained and rinsed beans.

Bake:

  • Transfer the mixture to a baking dish (8×8 or similar).
  • Cover tightly with aluminum foil.

Cook:

  • Bake in the preheated oven for 1 hour.

Finish:

  • Remove from the oven, uncover, and give everything a good stir. Taste and adjust seasoning if needed.

Serve:

  • Enjoy warm as a side or main dish. Great with toast, roasted veggies, or grain bowls!
