chickpea stuffed sweet potato

Ingredients

roasted chickpeas

nutritional yeast
zesty dill dressing

hummus (make your own or buy)

lemon juiced (or to taste)

dill (dried or fresh)

tsp
garlic powder
salt to taste
Instructions
start by baking (in oven) however many sweet potatoes you would like (remember to poke holes in them)
sautee chickpeas
meanwhile, drain and rinse a can of chickpeas
add drained chickpeas to a pan with olive oil
add turmeric, paprika, and nutritional yeast to chickpeas
sautee chickpeas in the pan until golden brown
zesty dill dressing
make your own hummus or add storebought hummus to a jar
add garlic powder, dill, salt, lemon, and water to thin
shake, stir, or blend dressing until desired consistency
assemble the sweet potato
once sweet potato is soft, remove from oven and let cool
once cooled, cut a slit in the middle and open the sweet potato
stuff the potato with the sauteed chickpeas, and top with the zesty dill dressing and any fresh herbs or seeds
